Fiddleheads

Fiddleheads are the young unfurled shoots of the ostrich fern. They taste similar to asparagus, with a woodsy undertone.
They should be boiled in salt water for a few minutes and the water discarded. Then you can sauté them in butter for a few minutes or use them any way you'd use asparagus.
